White Bean & Veggie Soup Recipe — From Dr. Hulsing’s Kitchen
This soup is great for everyone and especially for boosting fertility. It is high in FOLATE, BETA CAROTENE, and CALCIUM which are important fertility nutrients. (See below for more information on how these nutrients impact fertility.) One serving has 20 grams of protein and 14 grams of fiber.
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 heaping tsp of dried thyme
- 1 heaping tsp finely chopped fresh rosemary
- 8 gloves of garlic, crushed and minced
- 2 cans of organic white beans (BPA free lining) or equivalent cooked beans from scratch
- 2 carrots, diced
- 1 sweet potato, peeled and diced
- 1 (32 oz) container of chicken or vegetable broth or homemade stock
- 2 cups kale (1 bunch of lacinato kale, chopped with stems and center rib removed.)
- salt and pepper to taste
As usual, all ingredients are gluten free, dairy free, egg free, soy free!
1. Add 2 tbsp of olive oil to a large, heavy stock pot over medium heat.
2. Add 1 diced onion and sauté for about 5 minutes.
3. Add garlic and sauté for about 1 minute. Enjoy that smell!
4. Add the thyme, rosemary, carrots, and sweet potato. Saute for 5 minutes.
5. Add 32 ounces of chicken or vegetable broth and cooked white beans. Simmer for 10 minutes. Then add kale and simmer for an additional 10 minutes or until the veggies are tender. Season with salt and pepper to taste.
FOLATE: It is really important for men and women to get enough folate at least 3 months before trying to get pregnant as well as during a pregnancy. This is especially true if you have been on oral birth control pills. Folate reduces risks of birth defects, supports healthy egg and sperm development, improves IVF outcomes and can influence health growth and birth weight of baby when consumed by men before conception.
BETA CAROTENE: Supports healthy hormone production, a healthy endometrial lining, ovulation, and it can increase sperm quality.
CALCIUM: Supports fertile cervical fluid and sperm motility.
